Functional mushrooms: Vegan pancakes with Lion’s Mane and Chaga chocolate sauce

This recipe is vegan, easy, delicious, and above all, enhanced with healthy functional mushrooms!

Functional mushrooms are one of nature’s most powerful remedies to support better health, with a rich and ancient background in many classical herbal traditions worldwide. Benefits Lion’s Mane

Lion’s mane (Hericium erinaceus), known in Japan as “the priest from the mountains,” is a well-researched mushroom that has been found to have some important bioactive compounds that seem to boost memory, improve focus, and bring mental clarity. Some studies also show that Lion’s mane may be beneficial for people dealing with anxiety and depression. Traditionally Lion’s Mane powder is also used to treat stomach and digestive related issues.

Benefits Chaga

Is a mushroom that grows primarily on birch trees in the cold climate of the northern hemisphere. Chaga is traditionally used in herbal medicine for many health problems, but is probably best known for the remarkable effect it has on the immune system. Chaga also has a positive effect on the digestion tract, works anti-inflammatory, and has the highest levels of antioxidants found in any natural food so far.

Ingredients for 2 persons

  • 2 cups (480ml) of plant milk
  • 2 cups (160g) of oats
  • 1 tablespoon Lion’s Mane powder
  • half a teaspoon cinnamon
  • pinch of sea salt
  • few pinches baking powder

Chaga chocolate sauce

  • 6 pieces of dark chocolate
  • 1 teaspoon chaga powder
  • splash of plant milk
  • 1 teaspoon maple syrup

Instructions

Add all the ingredients for the pancakes to a blender blend until smooth. The mixture should not be too watery but not to thick either, then add to a pan and make whichever size pancakes you want. 

Chaga chocolate sauce

Warm the chocolate au bain-marie. When it begins to melt, add the other ingredients, stir until smooth.

Decorate your stack of pancakes with your favourite or other yummy things, then add the Chaga chocolate sauce and last but not least, enjoy!
