3 functional summer dressings, because everyone can always use a nice refreshing dressing! Whether you use the dressing for a summer salad or a hot pasta meal, anything is possible. But an extra dimension through functional mushroom powder of course, provides extra benefits, and that… we can all really use 🙂

To help you get started, we have put together 3 wonderfully functional summer dressings. 3, because, of course, we want to introduce you to all 3 mushroom powders. Their versatility is great, and the possibilities are endless.

Summer dressing with Lion’s Mane

Vegan lemon avocado dressing

  • 0.5 teaspoon Lion’s Mane
  • 1 avocado
  • Splash of soy milk
  • few sprigs of fresh parsley
  • 1 tablespoon of lemon juice
  • 1 clove of garlic (minced)
  • salt and pepper to taste

Add everything to a food processor and blend until smooth. Or mash the avocado, add the rest and mix together.

Summer dressing with Reishi

Vegan tahini dressing

  • 0.5 teaspoon Reishi
  • 80 ml tahini
  • 2 table spoons maple syrup
  • 1 clove of garlic (minced)
  • 3 tablespoons of lemon juice
  • salt and pepper to taste
  • 6 tablespoons of boiled water

Mix the Reishi with the hot water, let it cool down. Add the rest and whisk until smooth and combined. 

Summer dressing with Chaga

Vegan yogurt-balsamic dressing

  • 0.5 tsp Chaga
  • 3 tablespoons of balsamic vinegar
  • 170 ml unsweetened vegan yogurt (e.g. soy)
  • 2 teaspoons of mustard
  • 1 tablespoon of maple syrup
  • Pinch of garlic powder
  • salt and pepper to taste

Mix the Chaga with the mustard, add the rest and stir until smooth.
